Le Pleine Lune
This soft cheese with a bloomy rind is covered in vegetable ash. It becomes perfectly creamy as it ripens slowly from exterior to interior. It starts out with only the slightest acidity, but within a few days it develops flavours of butter and hot milk. Young, Le Pleine Lune’s core is chalky and neutral-tasting. Mature, it becomes pungent, and its black and white rind turns grey.
