L’Évanjules is a soft, surface-ripened cheese inspired by the best products from authentic Camembert dairies in Normandy. Its very fine, textured rind tends to wrinkle as it ripens and comes in subtle shades of off-white to deep tan. Its firm paste ages into a perfectly smooth, runny texture. Young, it offers a fragrance of fresh bread and has a slightly acidic milk taste. Once mature, it smells of sweet bread with a hint of hay, and will melt in your mouth, leaving a spicy hint of honey.
