Maître Jules is a large size (2.5 kg randow) soft, surface-ripened cheese with a washed rind and light orange colour. It matures slowly and develops a flavour reminiscent of alpine dairies, with notes of ripe fruit and cooked milk. Young, the cheese has the aroma of fresh bread. As it ripens, the texture becomes soft and creamy, and it offers a sustained taste in the mouth, with overtones of flowery honey.
