Mont Gleason is an Emmental cheese. Like the best European mountain cheeses, it bears the name of where it was produced: Mount Gleason, the first peak in the Appalachians foothills, where the magnificent village of Warwick, Québec, is located. This firm, pressed and uncooked cheese features fine eyes, a subtle fruity flavour and a somewhat nutty taste. The natural rind of this Emmental cheese is slightly coloured, the result of a few times stay in our ripening rooms.
