Saint-Médard
Saint-Médard, a semi-soft, surface-ripened, washed-rind cheese, is rubbed twice weekly in our cheese-ripening room. It offers a creamy texture throughout and an edible orange rind with a distinctive taste. When young, this cheese is smooth and flavourful. It becomes fruity and full-bodied as it matures.
