Vacherin

Vacherin is a semi-soft, surface-ripened and interior-ripened cheese. It has a distinctive creamy taste that is both tender and slightly tangy. Its full aroma and fruity flavour are reminiscent of over-ripe apples on the verge of fermentation. A washed rind gives it an orange-tinged exterior.
